Grillin' With Broc - Flat Iron Steaks

Baseball thick cut Sirloin - Seared

  • In 10 inch pan on high heat add 2 tablespoons of olive oil or Canola oil
  • Sear on high heat for 3 minutes per side
  • Add 3 tablespoons of real butter to the pan and 4 to 6 cloves of fresh garlic
  • While still over heat, spoon and baste the butter and oil over the steak for 1 minute

The steak will most likely need a 3- minute hit in the oven at 350 to finish to an internal temp of around 135 degrees.

LET STEAK REST A MINIMUM OF 10 MINUTES!

  • While steak is resting and in same pan toss in, 2 oz chopped onion, 2 TBS garlic, 2oz of fresh mushroom and 2 TBS real butter. Salt and pepper.
  • BE CAREFUL - Add 4 oz of Bourbon - It May Flame!!!!!!
  • Reduce mixture for 5 minutes
  • Add 6 oz of heavy Cream and stir in 3 oz of gorgonzola cream.
  • Reduce and stir until smooth consistency.
  • Drizzle on steak.
