How to Cook The Perfect Pot Roast

When the weather turns and the leaves are falling, this recipe will warm your soul with comfort.  Here is the perfect recipe for Pot Roast.

First thing is to make sure you choose the best roast to start with.  This would be the beef chuck roast or if your a pork roast lover the Pork Butt collar roast.  These roasts have plenty connective tissue to make sure the roast is "fall apart" when finished.

Start with a 2 to 3 pound chuck roast, season well with garlic, salt, and pepper.  

We like to use the old fashioned crock pot, but using an Instapot will reduce the cooking time tremendously.

Add the seasoned roast to the crock pot ad add water to just cover the top of the roast.

Here is a game changer for flavor....  add Beef Soup Base to the water about 4 tablespoons.  This thick paste add amazing flavor to the roast and slow cooking gives it plenty of time to soak into the meat.  If using pork use pork soup base.

Put your Crock pot on low or medium heat for about 6 hours.

After the 6 hour cook, check to make sure the roast is "fall apart".

add in 1 whole yellow or red onion chopped into large chunks.  

add 2 large potatoes, or 1 pound of rainbow fingerlings along with 3 large carrots cut into 2 inch chunks.

Put the lid back on and cook on high for an hour and a half.  The vegetables should be fork tender.

Remove the roast and the veggies and add to a serving dish.

This is when I pour the drippings of flavor from the roast into a sauce pan and add to high heat.  I add salt and pepper to taste and add one half cup of heavy cream and reduce until slightly thicker.  If you cant get it thick enough add a little corn starch to water then add the mixture slowly to the pan while stirring to thicken.

This make the perfect roast every time!  This recipe can be used for Beef, Pork, Bison ect..  Even wild game.
