Ingredients
For the Orange Marmalade Chutney:
-
Diced Red Onions
-
Diced Jalapeños
-
Diced Red Peppers
-
Olive Oil
-
Cumin
-
Curry
-
Cayenne (use caution, as the jalapeño adds heat)
-
Orange Marmalade
For the Blackened Ahi Tuna:
-
Number 1 Grade Ahi Tuna Steaks (approx. 1 inch thick)
-
Blackening Seasoning Blend: Paprika, Chili Powder, Cayenne, Onion Powder, Garlic Powder.
-
Salt (optional, to taste)
-
Olive Oil (for searing)
Instructions
1. Prepare the Chutney Base
-
Start by adding olive oil to a pan and lightly sautéing the diced jalapeños, red peppers, and red onions.
-
Sauté for only about one to two minutes; you want the vegetables to remain crunchy.
-
Add the dry spices: cumin, curry, and cayenne. Stir to incorporate.
-
Immediately add the orange marmalade to the vegetables.
-
Turn the stovetop off and mix until the chutney is fully incorporated. Set aside.
2. Prepare the Tuna Blackening Seasoning
-
In a shallow bowl, mix together the paprika, chili powder, cayenne, onion powder, and garlic powder to create the blackening blend.
3. Sear the Ahi Tuna
-
Dry the Tuna: Bring the tuna out of the bag and gently pat the steaks dry using napkins or paper towels. This allows the spices to stick.
-
Coat the Tuna: Take the Ahi steaks and coat them thoroughly with the blackening seasoning mix.
-
Heat the Pan: Heat a pan with a generous amount of olive oil until it is just before the smoking point (starting to get very hot).
-
Sear: Add the seasoned tuna to the hot oil. For an approximately one-inch thick cut of tuna, sear for about one minute on each side for a quick sear, leaving the center rare.
-
Rest: Pull the tuna out of the pan right away to stop the cooking process.
4. Finish and Serve
-
Once the tuna is finished, slice your Ahi nice and thin.
-
Present the sliced tuna on a serving board with the Orange Marmalade Chutney and fresh lemon wedges. Voilà, it's awesome!
