If you like Thai food like I do, this recipe will be a mainstay in your household like it is in ours.
Starting with the best pork on the planet, Salmon Creek Farms from Twin Falls Idaho is a must.
You will need 2 pounds of Salmon Creek Farms ground pork from Meat and Potato Company, Japanese BBQ sauce, sweet chili sauce, garlic, 1 large fresh sliced onion, 2 jalapeno peppers think sliced with the veins and seeds removed, 3 to 4 ounces of fresh Thai basil (regular basil will work in a pinch.) and one bunch of fresh cilantro for garnish.
In large pan brown off the ground pork and season with sea salt and black pepper to taste.
Remove the ground pork and drain the excess grease from pan, then add back to the original pan.
Next add the sliced onion, the Thai basil and the jalapeno peppers and mix throughout at a slow simmer. This will take about 5 minutes. Next add 4 oz Japanese BBQ sauce and 4 oz of Sweet chili sauce. Mix the sauce and incorporate fully over medium to low heat, about 3 to 4 more minutes.
Finally garnish the pan with chopped fresh cilantro and fresh chopped green onion.
We always eat this dish with sticky rice. You can get sweet sticky rice from your local Asian market. Make sure to rinse it and cook correctly.
In large bowl Add 3 cups of Sweet sticky rice and rinse with fresh cold water a minimum of 3 times.
After rinsing add water to the bowl just over the top of the rice to let soak for a minimum of 4 hours.
After soaking, put rice in Bamboo rice cooker over steam for 10 minutes with lid covering the top. Flip the rice and cook for an additional 5 minutes. Remove from heat and empty the rice on a large sheet pan then cover with plastic wrap to maintain moisture. Portion the rice in a large bowl then top with the Sweet Basil Pork.
