One of those specific items is our U8 Prawns. These are large prawns, with anywhere between six to eight of them per pound. They are already butterfly-cut in the shell, which makes them great for grilling and presentation—always leave that shell on for presentation!

This recipe is simple, focusing on highlighting the naturally sweet flavor of the large prawns with a complementary sweet and savory topper.

Recipe Overview

  • Seafood: U8 Prawns (6-8 per pound)

  • Cut: Butterfly cut, shell left on.

  • Cooking Method: Grilling.

  • Topper: Sweet Chutney or Topping.

Ingredients

  • U8 Prawns (butterfly cut, shell on)

  • Butter (or olive oil, for brushing)

  • Sweet Topper (e.g., Orange Marmalade Chutney, as shown)

  • Lime Wedges (for serving, optional)

Instructions

1. Prepare the Prawns

  • Ensure the prawns are butterfly cut and the shell is left on for presentation.

  • Lightly brush the exposed prawn meat with melted butter or olive oil.

2. Grill the Prawns

  • Place the prawns shell-side down on a hot grill.

  • Grill until the meat is opaque and cooked through.

3. Top and Serve

  • Once the prawns are cooked, remove them from the grill.

  • Spoon a sweet topper, such as an Orange Marmalade Chutney (as seen in the video), over the open, cooked meat section of the prawn.

  • Serve immediately with a lime wedge for a fresh squeeze.
