Nothing cracks the heat of those super hot summer days, like fresh chilled ceviche! This recipe is a family favorite!
Start with wild Patagonia prawns from the Meat and Potato Company! These shrimp are amazing! full of great sweet flavor and caught in the Ocean off the coast of Argentina.
Ingredients are
- 2# bag Patagonia Prawns.
- Fresh grape tomatoes
- yellow onion
- cilantro
- fresh squeezed lime juice 3
- fresh squeezed orange juice 2
- 2 firm yet ripe avocadoes
- salt and pepper
- touch of sugar
- 2 large jalapenos
First peel the prawns and flash (2 min) in boiling hot water. rinse and chill in ice water.
In large bowl dice 1.5# tomatoes, deveined Jalapenos, and one large onion.
Next add the remaining .5# of tomatoes into a food processor, and add the lime juice, orange juice, cilantro, 2- Tbls sugar, and a dash of salt and pepper and blend until all is finely ground.
Rinse the prawns and dice into small pieces, then add to the bowl of diced tomatoes and onions.
Add in the food processor mixture, then mix well.
Let sit in the refrigerator for 2 hours before consuming! This will be great for 2 days!
Serve with your favorite tortilla chips.
