Wild Prawns in Butter and Garlic scapes

While we do offer 2 kind of prawns, this recipe is using our wild harvested Patagonia Pink Prawns.  These are the sweetest and best tasting shrimp available!  We also were using chopped garlic scapes from Thompson Family Farms out of Bliss Idaho that we picked up at the local Farmers Market.

Shrimp are often over cooked.  This could most likey be the most over cooked item when it comes to home cooking.  Everyone wants to make sure that they thoroughly cook shrimp and they truly only need a few minutes over high heat.

Start by thawing and cleaning your prawns.  Remove any dark veins they may have left along with the shells.  Rinse well and pat dry with paper towel.  Once dry, season lightly with salt and pepper.

In a cast iron or carbon steel pan, turn on your stove and bring the temp up to high.

Start with adding 2 tablespoons of fresh butter to the pan, then add your prawns and chopped garlic scapes.  You can substitute regular garlic with no problem, the scapes were just super cool!  Toss several times and cook for about 2 minutes.  I then add 2oz of white wine and continue to move the prawns around and sauté for about 4 more minutes.  remember do not over cook!  They prawns should turn a bright red to pinkish color and firm up.

Remove from heat and serve!  This is lights out!
